Introduction

I made this to use up leftover cooked rice. I made this to use up leftover cooked rice.
Number of Servings: 6

Ingredients

    1 tsp olive oil
    2 cloves garlic - crushed
    1 red onion - chopped
    4 cups cooked rice
    1 cup frozen corn
    1 cup frozen peas
    salt and pepper to taste

Directions

Heat oil and soften onion and garlic. Add cooked rice, peas and corn. Toss until heated through and season with salt and pepper.

Serving Size: Makes 6 1 cup servings
