Ingredients

    1 1/2 tablespoons reduced fat mayonnaise
    1 teaspoon chopped fresh basil
    1 Roma tomato, seeded and chopped
    1/2 teaspoon minced garlic
    2 ounces cooked boneless, skinless chicken breast, thinly sliced
    2 large slices 100% whole wheat bread
    1 ounce part-skim mozzarella cheese, sliced thin
    Nonstick cooking spray

Directions

In a small bowl, mix together the mayonnaise, basil, tomato, and minced garlic. Stir in the chicken and coat well. Place the cheese on one slice of bread. Spread the chicken mixture on top. Cover with the second slice of bread. Coat a nonstick pan with cooking spray. Cook the panini over medium heat for approximately 2 minutes on each side, or until golden.
