Introduction
I made this before and it was really good, but I need more substance to it, so I decided to stuff my guys with rice and added a little balsamic dressing to give it some flavor. Ingredients

4 Round zucchini's - top cut out and center cored out
1/4 cup of chopped zucchini
1 tomato diced and seeded
1 cup of cooked brown rice (I used Trader Joe's microwave rice)
1.5 oz of shredded mozzarella cheese (1 oz for inside, .05 oz for topping)
2 tsp of balsamic salad dressing
Dash of pepper
dash of seasoning (I used Trader Joe's 21 spice salute)
cooking spray
You could also make this with a long zucchini, follow the instructions the same.
Directions
Heat the grill on low
Core out your zucchini and reserve 1/4 cup of it for mixture.
In a bowl add rice, tomato, reserved zucchini, balsamic dressing, 1 oz of mozzarella cheese, pepper and seasoning. Mix together in bowl and then stuff zucchini.
Add remaining mozzarella to the top of zucchini and then spray the zucchini with cooking spray.
Wrap each one with the aluminium foil and place on grill.
Cook for about 10 - 15 minutes, or until cheese is melted and zucchini is soft.
Enjoy!
