Ingredients

    1 tsp cornstarch
    2 tbsp reduced-sodium soy sauce
    4 tbsp water
    4 tbsp hoisin sauce
    4 tsp canola oil
    2 tbsp each fresh minced ginger an garlic
    2-14oz. bags coleslaw mix
    1 cup chopped scallions
    4 cups shredded rotisserie chicken
    2 tsp toasted sesame oil
    16- 6" whole wheat tortillas

Directions

Whisk cornstarch, soy sauce, water and hoisin in small bowl. Heat canola oil in large nonstick pan over medium-high heat. Add ginger and garlic and stir-fry 1 minute. Add coleslaw mix and half of scallions and stir-fry until just wilted, about 3 minutes. Add chicken and soy sauce mixture. Toss until heated through. Drizzle with sesame oil. Serve wrapped in tortillas, warmed in microwave, and if desired add additional hoisin and remaining chopped scallions.

Serving Size: makes 8 servings of 2 tortillas each
