This was an experiment that turned out for the best! I put different coloured bell peppers together with every kind of melon added some flavourful surprises and created a really tasty unique salad! Ingredients

    - 100 g Red, Green, Yellow Bell Peppers, chopped
    - 1 tbsp red onion, chopped
    - 1 green onion, chopped
    - 3 honeydew melon balls
    - 3 watermelon balls
    - 3 cantaloupe balls
    - 1 tbsp pine nuts
    - 1 tbsp fresh parsley, chopped

    to dress:
    - 1 tbsp red wine vinegar
    - dash of ground black pepper
    - dash of red pepper flakes

Directions

toss the peppers, onions and pine nuts. top with fresh parsley and melon. drizzle on some red wine vinegar, black pepper and red pepper flakes all to taste. enjoy the crazy combo of flavour!

Serving Size: one moderate sized salad
