Introduction
This is one of those, throw in the kitchen sink sort of meals. A great meal to make when you've got lots of veggie odds and ends. Would also be good using diced zucchini or green beans and any spinach or greens you have onhand. I used canned red beans, smoked turkey sausage, onion, fresh chili pepper, jarred jalapenos, celery, carrots, a fresh tomato, and beet greens I had onhand. Ingredients

1 Tbsp Olive Oil
4 Garlic Cloves, minced
1 Medium Onion, raw, diced
2 Small (or 1 Large) Carrot, diced
1-2 stalks Celery, diced
1/2 cup Jalapeno Sliced, pickled (or 1-2 small fresh Jalapenos)
1 Red Chili Pepper, fresh, diced
1 cup Tri-Colored Peppers (frozen or fresh), diced
2 Beef Boullion Cubes
1 Tbsp Chili powder
1 Tbsp Cumin
1 tsp Paprika
1 tsp Basil, dried
1/4 tsp Black Pepper, freshly ground
1/4 tsp Sea Salt
2 cups Beet Greens (or your choice of spinach or other greens), chopped
1 Large (or 2 small) Tomatoes, fresh, chopped
1 Can (15.5 oz) Red Beans (or bean of your choice), rinsed
8 oz Smoked Turkey Sausage (kielbasa-style), diced
2 Tbsp Apple Cider Vinegar (or lemon juice)
2 cups of Water
Directions
On a medium flame, heat Olive Oil in a Dutch Oven. Add Onions and Garlic, saute for 2-3 minutes.
Add Jalapeno, Chili Peppers, (also Bell Peppers if fresh), Carrots, and Celery. Cook for 4-5 minutes (add a bit of the 2 cups of water if necessary to prevent sticking).
If Bell Peppers were frozen, add these now, along with chopped Tomatoes, Boullion Cubes, and all spices listed and cover with lid.
Once this begins to simmer, add in Greens (or spinach), about 1/4 cup of the 2 cups of water, turn to low, cover and simmer until greens are wilted.
Add Beans, Sausage, Vinegar and the remainder of the water. Cover and simmer for about 10 minutes.
Serve over rice, or with crusty whole grain bread.
