Ingredients
-
1/2 c Organic Oatmeal
5-6 egg whites
1/2 t cinnamon
2-3 scoops of powdered stevia (or too your taste)
1 t pure vanilla extract
Subsitutions:
-If you don't have powdered stevia you can use liquid stevia.
-My favoirte is Vanilla Creme Liquid Stevia from SweetLeaf.. if I use 8-10 drops I can use that in place of the powdered stevia and the vanilla extract.
- If you don't have stevia you can use another sweetener, stevia is natural not chemical that's why I like to use it.
- You can also replace the stevia or sweetener with 2 T of white sugar, that will bump the calories and carb up a little bit, which is not included in this nutrition lable.
Directions
Cook oatmeal just like you would on the stove or you can even use microwave if you wish. Make sure it's thick.
In seperate bowl mix egg whites together. When oatmeal is done mix it in with the egg whites, then stir in the cinnamon, stevia, and vanilla. Mix well.
Heat up a pan on medium- medium low heat, and poor mixture into pan. You can use a little butter or non stick spray if you wish. cook slowly, flip when you feel it's firm enough about 4 min per side
I like mine served with fresh blueberries and chopped nuts! Enjoy!
Serving Size: makes 1 big pancake
