Introduction
I make my own guacamole that is lower in fat than the store bought version - mash a really ripe avocado with about a tbsp of salsa (or more, depending on your taste) and a tsp or so of lemon or lime juice. This makes about 1 cup and has 300 cal and 27 grams of fat - divided by 12 that's 25 cal and 2.025 grams of fat per serving. Ingredients

1 lb boneless pork roast
1 cup chopped onion
1 16 oz can whole tomatoes, no salt added
2, jalapeno peppers, seeded and chopped
1/2 tsp salt
1/2 tsp black pepper
12 low fat mission tortillas, soft taco size
1 cup shredded lettuce
1 cup Kraft Mexican Style 4 Cheese Blend
1/2 cup low fat sour cream
3/4 cup guacamole (not in calculator, see note)
Directions
Combine first 6 ingredients together in a large sauce pan; fill with enough water to cover the roast. Simmer on low heat for about 2 hours, or until meat is fork tender. Remove meat and strain veggies. Shred meat with a fork, and place back in pan with the veggies and a little bit of cooking liquid to reheat just before serving.
For each serving, place approx 1 oz of meat and veggie mix, a little lettuce, cheese, sour cream, and guacamole (opt) in a tortilla. Enjoy!
