Introduction

This is my variation of Chef Meg's Chicken Marsala. I supstituted the fish for chicken, and used diced stewed tomatoes in place of the tomato juice and chicken stock. I also increased the mushrooms. Number of Servings: 4

Ingredients

    14 oz can diced tomatoes - no salt
    1/4 tsp pepper
    1 cup sliced mushrooms, fresh
    Juice from 1/2 lemon
    1 tbsp parsley
    1 lb talapia filets

Directions

Combine all ingredients into a large plastic bag. Let fish marinade for at least a 1/2 hour. Remove fish from the marinade, and cook on the grill, until fish flakes easily (approx 15 to 20 minutes).
While fish is grilling, pour marinade into a saucepan, and on medium/high heat, cook until mushrooms are cooked and sauce thickens. A bit of flour may be added to help it thicken.
I grill my fish on the BBQ in a grilling basket, and add a few pepoers and grill together. I served with salad and a wild rice mixture. Sauce can be spooned over fish and rice.

    Very Good
    My son said my husband was no longer the only "master of fish" in the house when he had this recipe. My husband liked it too, and I really didn't mind it. We did marinade it over night though. Aside from that, no difference. - 3/29/13
