Introduction

Great way to use summer squash with no added butter or oil. Great way to use summer squash with no added butter or oil.
Number of Servings: 8

Ingredients

    3 cups sliced summer squash
    .5 cup chopped onion
    1.25 cup cheddar cheese
    1.5 cups bread crumbs (from white bread)
    2 eggs

Directions

Slice squash and add to salted boiling water for 10 minutes or until tender, but not mushy. In a separate pan, spray with nonstick spray and cook onions until soft, but not brown. Drain squash and add swuash and onions to a bowl. Smash squash slightly to break up large pieces. Add 1 cup bread crumbs, salt and pepper and 2 eggs (beaten prior to adding). Mix together and then fold in .5 cup cheese. Spray a pan with nonstick spray and spread in pan. Top with 1/2 cup more crumbs and remainder of cheese. Bake a 350 degrees for 30 minutes. Yummy!
