Introduction

You can use any color peppers you like. You can use any color peppers you like.
Number of Servings: 4

Ingredients

    1 teaspoon olive oil
    1/2 cup green pepper, chopped
    1/2 cup red pepper, chopped
    1/4 cup onion, chopped
    1/2-1 jalapeno, seeds and ribs removed, minced
    1 teaspoon garlic, minced
    2 cups frozen corn, thawed
    1 tablespoon cilantro, finely chopped
    1/2 teaspoon cajun seasoning

Directions

In a medium non-stick skillet, heat olive oil over medium-high heat. Add onion, both peppers and jalapeno and saute for about 2-3 minutes or until crisp tender. Stir in garlic and corn. Continue cooking till warmed through; approximately another 5 minutes. Stir in cilantro and cajun seasoning.

Serving Size: makes 4; 3/4 cup servings
