Ingredients

    Spaghettini, 150-200 g
    4 oz pancetta cubes, chopped
    1 medium onion, chopped
    1 clove garlic, chopped
    1 carrot, chopped
    1 celery stalk, chopped
    1 egg, beaten
    Pecorino romano cheese, 50 g grated
    salt, pepper
    olive oil

Directions

Get a pot of salted water boiling. While water heats, chop all vegetables. Heat 1 tbsp of olive oil in large frying pan over medium heat. Cook pancetta, garlic and onion for 5 minutes. Add pasta to boiling water (takes about 5 minutes). Add remaining vegetables, with some salt and pepper to pan, stirring occasionally. After pasta cooks, drain and immediately return to pot. Add 2 tbsp oil and beaten egg to the pasta, stir quickly to mix thoroughly. Add some more salt and pepper to taste and stir quickly. Pour over vegetable and pancetta, remove from heat and stir. Serve hot, and top with cheese.
