Introduction
I'm working my way through a vegetarian cookbook called "Fresh Food Fast" and... well, its not that great. The original rendition of this recipe calls for 12oz of cheese for just 4 servings and came out at almost 1000 calories a serving. Since I don't want to only eat these for an entire day, I made it a lot skinnier. For this rendition, we'll just fold one tortilla in half per a quesadilla. This is meant to be served with Chilled Cucumber Soup[see my recipe] and Salsa.If you followed the recipe from Fresh Food Fast, do not use this recipe in your nutrition tracker! Ingredients

2 cups of Zucchini, Grated
1 1/2 teaspoons sea salt
2 cups of black beans
4 oz of Mozzarella Cheese, part skim
2 scallions, chopped
1 jalapeno pepper, finely chopped
4 flour tortillas, 8" diameter
Olive Oil Spray
Salsa
Directions
Mix salt and Zucchini together and squeeze excess moisture from zucchini.
Combine zucchini, beans, cheese, scallions, and jalapeno.
Spray one side of 2 of the tortillas with the oil. Spread the other 2 tortillas with the mixture and top with oil sprayed side up.
You can cook these in the oven broiler, in a skillet, or (this is how I did it) on a griddle. Just make sure to cook until cheese is all melted. You can also split the mixture between all four tortillas and fold them in half and then cook them that way. Serve with salsa. 1/2 quesadilla per a person.
[If you like to use a lot of reduced calorie product so you get bigger food for the same amount of calories, these can be made with reduced-fat tortillas and reduced fat tortillas, bulked out with more zucchini, and served as whole tortillas for about the same amount of calories.]
