Introduction

Great quick on the go breakfast. Cut in half and either share it or save it for the next day! Add mushrooms if you wish, use soy cheese or even silken tofu for a vegan version. Ingredients

    3 egg whites
    1 oz shredded 50% reduced fat cheddar cheese
    1/2 c. salsa
    1/2 c. red bell pepper, sliced thinly
    1/2 c. sweet onion, sliced thinly
    1 10 inch whole wheat tortilla
    Pam Spray

Directions

Heat a non stick 10 inch pan over medium heat. Spray with Pam. Add veggies and cook until soft, approximately 5 minutes. Meanwhile, beat egg whites with a bit of water. When veggies are soft, add egg whites and scrambled but not dry. Add cheese and let it melt. take egg veggie mixture and place on 1/3 of the tortilla. Top with salsa. Wrap it burrito style. if you wish, place on a George Foreman grill or a grill pan and grill it. Cut in half and enjoy!
