Ingredients

    1/2 Cup Vegetable Stock
    1 Medium Red Onion
    3 Medium Peppers (green, red or yellow...or one of each!)
    3 Medium Potatos, raw & cut (Yams can be substituted)
    3/4 Cup Chickpeas
    1/4 Cup Raisins
    2 Cups Zucchini, sliced
    3 Tbs Tomato paste canned, low salt
    1 tsp Coriander, ground
    1 tsp Cumin seed, ground
    1/4 tsp Cayenne pepper
    1 Medium Garlic clove, crushed
    1/2 tsp Paprika
    1/4 Cup White Table or Cooking Wine
    10 Ounces Couscous, uncooked

Directions

Saute onions and peppers in broth. Add remaining ingredients (except couscous) and simmer for 30 minutes.

Meanwhile, prepare couscous according to box instructions.

Let vegetables stand for 10 minutes. Serve over couscous.
