Ingredients

    Delallo Balsamic Vinaigrette, 1 tbsp
    Atlantic Salmon 8 oz
    Ancient Harvest Traditional Whole Grain Quinoa, .5 cup dry
    Spinach, fresh, 2 cup
    French's Honey Dijon Mustard, 2 tbsp
    Garlic, Minced, Spice World .5 tsp
    Tarragon, ground, 1 tsp

Directions

Cook quinoa according to package directions. Mix mustard, tarragon and garlic together. Spread on skinned salmon side. Place salmon in the broiler for 10 minutes (while quinoa is cooking) to be ready at the same time.

Take two cups of spinach and spread out on plate.

Allow quinoa and and salmon to cool briefly before placing on spinach covered plate.

Add dressing and enjoy!
