Introduction

Salsa used as a topping for baked or grilled fish. Salsa used as a topping for baked or grilled fish.
Number of Servings: 4

Ingredients

    1 large Mango, finely diced
    1 medium sweet red pepper, finely diced
    1/2 medium red onion, finely diced
    1/2 medium jalapeno pepper(s), seeded and minced
    1Tbsp fresh cilantro, chopped
    1 1/2 Tbsp lime juice
    1/8 tsp table salt, or to taste
    1/8 tsp black pepper, or to taste

Directions

salt and pepper is to taste - approximately 1/8 tsp of each. The lime juice is actually can be fresh or bottled. If I used dried Cilantro - I use a bit less.

Mix all ingredients in a bowl, Stir well. Let sit for 15-30 minutes before serving on the fish.

If fish is baked - you can also bake the salsa on top of the fish.

Serving Size: Makes about 4 1/2 cup servings.
