Number of Servings: 4

Ingredients

    3 Cans (14 1/2oz each) Vegetable Broth
    2 pkg (9oz each) refrigerate spinach (or cheese) tortellini
    1 Can (14 1/2oz) diced tomatoes (Italian style)
    4 Scallions chopped
    2 Garlic Cloves minced
    1 tsp dried basil

    Freshly grated parmesan cheese for garnish

Directions

Bring broth to a boil in a large pot over medium-high heat
Add tortellini, tomatoes w/juice, scallions, garlic, and basil
Bring to a boil
Reduce heat to low and let simmer for 10 minutes
Garnish with cheese when served.
