Ingredients


    2 cups moth beans (Indian light brown beans)
    1.5 cups long grain brown rice
    1 onion chopped (2 cups)
    1 tbs. Canola Oil
    1.5 pounds ground turkey (7% fat)
    1/2 cup chopped parsley
    1 tsp. garlic powder
    1 tbs. paprika
    1 tsp. cumin
    1 tsp. salt
    1/2 tsp. pepper
    1 tsp. tumeric

Directions

Cook beans by soaking overnight and boiling until tender (I cooked in the slow cooker for 10 hours on low).
Add rice, 3 cups of water, and beans to a pot and bring to a boil. Reduce heat and simmer for 35 minutes or until rice is cooked. Meanwhile, in a 12" skillet heat olive oil over medium high heat. Saute' onion until translucent. Add ground turkey and spices and parsley. Cook until meat is cooked through. Turn off and remove from heat. When rice and beans have cooked, add to the pot with the ground turkey. Adjust spices as necessary. Serve with fresh chopped tomato and tzatziki (yogurt w/ fresh garlic and lemon juice).
