A delicious low-carb version of creamed spinach. A delicious low-carb version of creamed spinach.
Number of Servings: 4


    3 Tbsp. butter
    1 Sweet onion (minced)
    1 Clove Garlic (minced)
    10 oz. Frozen Spinach
    1/2 Cup Heavy Whipping Cream
    1/4 Cup Cream Cheese
    1/8 tsp Nutmeg
    3 Tbsp Parmesan Cheese
    Salt & Pepper to taste


In a skillet, saute onion in 1 Tbsp butter. When the onion is nearly translucent, add garlic and saute for an additional minute. Add spinach, mix, cover and cook on medium for 5 minutes.

Melt 2 Tbsp butter in a saucepan on medium heat. Stir in cream cheese until melted. Whisk in heavy cream, nutmeg and salt & pepper.

Pour cream sauce over spinach and incorporate. Warm the mixture completely and remove from heat.

Stir in parmesan cheese..

Salt & Pepper to taste.

    I made this last night. The only change I made was that I used a 16 oz bag of spinach because that was what I had. This was excellent. My family fought over who would get the last serving in the bowl. Thanks for sharing this. I tried this before with other recipes, but this was much better. - 2/27/16
