Ingredients

    2 cups cooked long grain brown rice
    1 16 oz can drained and rinsed black beans
    5 oz chopped skinless chicken breast
    1 diced sweet red pepper
    1 peeled and diced cucumber
    1 or 2 can(s) drained mandarin oranges
    1 small bunch chopped fresh cilantro
    1 sprig chopped fresh mint
    4 cups chopped dark green lettuce (romaine, red leaf etc.)
    1 clove gariic mashed
    1/2 tsp salt
    1/2 tsp ground black pepper
    1 tbsp dried basil or dill or both
    juice of 1 lime
    2 tbsp rice wine vinegar
    1 tbsp flax seed oil

Directions

Mix vinegar, lime juice, salt, pepper, basil or dill and garlic in a cup. Blend all other ingredients in a salad bowl and pour in vinegar and lime juice mixture. bled well. Serve 1 1/2 cup of rice and vegetable salad over 1 cup of lettuce on individual plates. Enjoy!

Serving Size: 1/12 cup over 1 cup of lettuce
