Introduction

Very typical pancakes with a NUTritious kick. Very typical pancakes with a NUTritious kick.
Number of Servings: 6

Ingredients

    Dry:
    1.5 c. AP Flour
    2 Tbs. sugar
    .5 tsp salt
    1.5 tsp. baking powder
    1 oz walnuts, chopped
    1/3 c. dried cranberries

    Wet:
    1.5 c. skim milk
    2 lg. eggs
    1 tsp vanilla extract
    3 Tbs. canola or vegetable oil

Directions

Mix dry ingredients together in a medium to large mixing bowl. In a separate bowl, beat together wet ingredients. Add wet to dry and mix just enough to bring together. Cook 1/2 cups of batter in skillet on medium-low heat with just enough oil to lubricate. Flip when bubbles form and stay on wet side. Enjoy with molasses or honey.
