Ingredients

    1/4 cup LIght brown sugar
    1 tbsp Dark Brown sugar
    4 tbsp paprika
    1 tbsp black pepper
    1 tbsp salt
    1/2 tbsp cumin
    1/2 tbsp thyme
    1/2 tbsp onion powder
    1/2 tbsp garlic powder
    1 tsp cinnamon
    1 tsp corriander
    1/2 tsp celery salt
    1/2 tsp cayenne powder
    1/2 ancho chili powder
    2 racks pork spare ribs

    8 oz of smoking wood chips (apple/hickory recommended)
    3-4 cups apple juice
    1 cup apple vinegar

Directions

Mix all the ingredients up to ancho chili powder. Prep the ribs by removing the membrane on the bone side (A paper towel facilitates keeping a hold on the membrane). Remove the flat (part of the brisket and located on the meat side of the rack) if you like. If you remove, put on rub on the flat and cook to below instructions and add to baked beans or keep as a cook's snack. If you have a separate smoker chamber, start charcoal pyramid, and get smoker temp up to 200-225F. Place an aluminum drip pan under the grates in the main chamber and fill w/ apple juice and vinegar. Place ribs over the drip pan. Place 4 oz of unsoaked wood chips on charcoal after it goes to ash. Add remaining 4 oz of chips after 30-40 min. Cook ribs for 4 hours.
