Ingredients

    1 graham cracker crust (see my cookbooks for the recipe)
    15 oz pumpkin (not pie filling)
    14 oz fat free sweetened condensed milk
    2 eggs (or 1/2 cup egg substitute)
    1 t cinnamon
    1/2 t ginger
    1/2 t nutmeg
    1/2 t salt

Directions

Preheat oven to 425.

Whisk all ingredients together until smooth.

Pour onto 9-inch graham cracker crust.

Bake 15 minutes.

Reduce oven temperature to 350, bake 35-40 minutes.

Pie is done when knife inserted 1 inch from the crust is clean, and center is moist but set.

Makes anywhere between 8 and 16 servings - depends on how big your slices are!

    Great recipe only thing if using the premade graham cracker crust from keebler it doesn't all fit. Otherwise family loved it this will definitely be a must from now on. Thank you - 11/21/12

    Tasted just like the traditional pumpkin pie. I used egg substitute and low fat graham crackers, even cut the sugar in the crust -- nobody missed the extra calories! - 11/22/07
