Introduction

Wonderfully simple recipe from my French friend Charlotte. She doesn't call it "French" onion soup because she's from France - so the "French" is implied. Number of Servings: 8

Ingredients

    3 Tb butter
    6 medium onions cut into thick slices
    1/3 cup red wine
    2 garlic cloves - crushed
    8 cups beef broth
    4 pieces fresh thyme
    2 bay leaves
    1/2 baguette
    1/2 cup swiss cheese

Directions

Melt the butter in a large pot. Add the onions and garlic and cook for 15 minutes mixing occasionally. Add the wine, the broth, the thyme, and the bay leaves. Bring to a boil and simmer for 20 minutes (uncovered --- mix from time to time).

Cut eh bread in slices and place on baking sheet and put in teh broiler until they are toasted on both sides. Place the cheese on the bread and let it melt until it's bubbling.

To serve: place the bread/cheese in bowl and pour the hot soup over it.
