Ingredients

    2 cans (5 oz each) drained
    1/2 cup chopped onion
    1 teaspoon minced garlic
    3 tablespoons soy sauce
    1 tablespoon lemon juice
    2 tablespoons extra virgin olive oil
    1 cup sliced red bell peppers
    1 cup sliced yellow bell peppers
    1.5 cup japanese soba noodles

Directions

Heat oil in a large skillet or wok and stir-fry onion, garlic and vegetables until crisp and tender; about four minutes. Add tuna, soy sauce, sugar, lemon juice and 1 tablespoon water. Stir-fry for 1 minute, until tuna is heated through. Serve over hot rice.
