    1/4 C cooked brown rice
    1/4 C cooked ground beef
    1 tsp cumin
    1 med baby zucchini chopped
    2 lg mushrooms chopped

    saute in pan until veg is soft.

    2 eggs

    add eggs

    cook thru. fill warm 8 in tortilla.

    top with 1/8c 2% mexican blend cheese

    add mango salsa is desired
