Introduction
an easy meal for any time of the day! easily customizable to your liking. an easy meal for any time of the day! easily customizable to your liking.Number of Servings: 4
Ingredients
-
6 eggs
1 chicken breast, seasoned to your liking
2 slices bacon, cut in half
1/2c chopped broccoli
1/2c diced onion
1/4c diced tomato (fresh)
1/4c parmesan cheese
1/4c heavy whipping cream (or any other milk of your choice)
Directions
Preheat oven to 350*F
Cook bacon in non-stick frying pan on medium heat.
While bacon is cooking...
-cube your seasoned chicken breast into small pieces.
-crack your eggs into a small bowl
-add whipping cream or milk
-add diced onions, diced tomato, and chopped broccoli
Whisk all ingredients together until well combined
Your bacon should be done cooking by now. Put on paper towel to drain, and on medium heat, add diced up chicken pieces. Cook chicken until no longer pink, stirring/turning often.
Grease a round cake pan (standard size- I think like 8 or 9in?) with butter or other choice. Add cooked chicken bits to bottom of pan. Pour egg mixture over chicken. Sprinkle parmesan cheese all over top.
Cook at 350*F for 20-30 min, or until top is a golden color and an inserted toothpick comes out free of runny-ness. Cut into quarters and serve!
You can substitute the meat for any other option you like (sausage, ground beef, steak pieces, etc). Play around with the seasoning of the chicken, the type of cheese or milk. Get fun with it!
