Introduction
I make this with ground turkey, but original recipe says you can use any ground meat, or tenderloin. The cookbook also says that one recipe serves two, but I have found that it's enough to serve four and have listed this way. You can substitute white rice for brown, but it will reduce your fiber. Ingredients

Olive Oil Spray
1/2 medium onion minced
1/2 red bell pepper minced
8-10 mushrooms sliced
1/2 t ground cumin
sea salt & ground pepper to taste
22 oz.. lean (93%) ground turkey
1 cup parboiled brown rice
1 cup plus 1T low sodium broth
2 cups cubed butternut squash
2 cups broccoli florets
Directions
This is a recipe from the "Glorious One Pot Meals" cookbook. It works great with Le Creuset Enameled Cast Iron dutch ovens
Makes 4 servings (about 2 cups each)
- Heat oven to 450 degrees
- Spray 2 qt. dutch oven with olive oil spray
- Mix onion,peppers,mushrooms & spices and meat and mix well
- Rinse rice and tip into pot; cover with broth
- Drop forkfuls of meat mixture on top of rice
- Layer squash on top of meat
- Layer broccoli on top of squash
Cover & bake for 45 minutes
