Ingredients

    1-15 oz can black beans, drain and rinse
    1 can sweet corn (drained) or refill bean can with frozen sweet corn
    1 28 oz can ro-tel diced tomatoes with green chilies (partially drained)
    1/2 bunch cilantro, rinsed and chopped
    1/2 large red onion, chopped fine
    2 cloves garlic, minced

    Dressing:
    2 Tablespoons vinegar
    2 Tablespoons Extra Virgin Olive Oil
    2 Tablespoons lime (or lemon) juice
    1/4 teaspoon salt
    1 teaspoon ground cumin
    1/4 teaspoon pepper

Directions

Toss first six ingredients. Whisk dressing in a small bowl and pour over salad. Toss to coat well. Refrigerate at least 1 hour before serving.
