Introduction

A great condiment to serve with a grilled Pork Tenderloin or on BBQ Pork Sandwiches. Add to a grilled cheese sandwich. As an appetizer, serve with crackers and shaved Parmesan cheese or Goat Cheese. Ingredients

    1T Butter
    2 cups Onion, sliced thin
    2T Water
    1T Thyme, fresh (or 1/2 tsp dried Thyme)
    2 tsp Brown Sugar
    1/4 cup Cider Vinegar
    1/4 tsp Dry Mustard
    Salt
    Ground Red Pepper
    1 Bay Leaf

Directions

1.) In saucepan melt the butter. Add onions and water. Cook about 20 minutes until tender.
2.) Stir in brown sugar and cook 2 more minutes. Add vinegar, mustard, salt (to taste), red pepper and bay leaf.
3.) Bring to a simmer and cook another 6 minutes, until most of the liquid has dissolved. Remove bay leaf and cool.

Serving Size: Makes about 8 servings
