Ingredients
-
2 large eggs, beaten
1 slice 2% american cheese (Kraft is good)
2 1/2 pieces Land O'Frost Canadian Bacon
Directions
Start burner on stove heating to medium high heat
Spray omelet sized pan (small skillet) with Pam or other cooking spray
Beat 2 eggs until frothy (using a fork)
Cut cheese slice into 2 pieces, then cut each piece into 4 strips the long way. Keep portions separate.
Cut bacon into 2 sets. Then dice each set. Keep portions separate.
Set skillet onto hot burner. Let get warm. Pour 1/2 eggs into the skillet. Wait 30 seconds to 1 minute for eggs to set.
Lay strips of cheese down 1/2 of omelet, sprinkle with bacon pieces.
When edges of omelet are dry and the egg is mostly set, flip 1/2 of the omelet over the other half. Cook until at desired done-ness. (Total cooking time for me is about 3-5 minutes, depending on how hot the burner is.)
Repeat with the rest of the ingredients. Serve with fruit and coffee/tea for a lovely breakfast
