Introduction

A yummy, moist coffee cake. I used traditional baking ingredients, but I think this could be made with substitutes without too much taste sacrifice. Try whole wheat flour, plain Greek yogurt, egg substitute or Splenda baking blend to reduce calories. Enjoy! A yummy, moist coffee cake. Ingredients

    1 c flour
    1/2 c sugar
    1/2 t baking powder
    1/4 t baking soda
    1/4 t salt
    1 egg
    6 oz container Greek yogurt (vanilla or plain)
    2 T melted butter
    1 t vanilla extract
    1 c berries

Directions

Preheat oven to 375 degrees. Spray a 8-inch square glass baking dish with nonstick spray.

In a large bowl, combine dry ingredients, mix to combine. In a smaller bowl, whisk together the egg, yogurt, butter and vanilla. Combine the wet and dry ingredients in the large bowl until just mixed. Place 2/3 of the batter in the baking dish, spread to edges. Pour berries on the batter, distributing evenly, then top with the remaining batter and smooth out as best you can. This is a very thick batter.

Bake at 375 for 35-40 minutes.

This coffee cake can be topped with a powdered sugar glaze or an oatmeal/butter/sugar/flour crumble, but those items are not included in the calorie count.
