Ingredients

    2 large eggs
    1 tbsp milk
    1 tbsp shredded cheddar cheese
    1 tbsp bacon pieces
    1 slice whole grain white bread
    1/2 tbsp light spreadable butter

Directions

Heat a nonstick skillet over medium-low heat. Spray skillet with cooking spray. Whisk eggs and milk, then then pour into skillet.

Cook eggs while stirring until just slightly runny, then flatten into circle. Spoon the bacon bits and cheddar cheese across the center of the omelet and fold in half.

Cook for another minute or so, but don't overcook or allow the egg to turn brown. If necessary, you can flip the entire omelet over to cook the top for 30 seconds or so.

Serve with buttered toast.

Makes 1 serving.
