Introduction

Number of Servings: 2

Ingredients

    100g fine rice noodles (cooked as per pack instructions and allowed to cool)
    1/2 clove garlic, grated or crushed
    2 tbsp fish sauce
    1 tbsp lime juice
    2 tsps peanut oil
    2 spring onions, sliced thinly
    1/4 cup coarsely chopped coriander leaf
    1 red bird eye (thai) chilli, finely chopped
    500g ish of cooked seafood (I used a mixture of prawns and scallops, fried off in oil and butter)

Directions

Whisk the garlic, fish sauce, lime juice and oil in a large bowl.
Add the cold noodles, onion, coriander, chilli and seafood and toss gently.
Chill if time.
You can add a tbsp or 2 of chopped peanuts if you fancy

Serving Size: Serves 2 as a light lunch or starter
