Ingredients

    4 Chicken breasts - deboned, skinned and chopped into bite-sized pieces
    1 cup brown rice
    3 stalks of celery, chopped
    1 large onion, chopped
    1 cup of carrot, chopped
    1 T olive oil
    2 cups chicken stock
    1 t oregano
    1 T rosemary
    2 T salt (kosher)
    1 T pepper, black

Directions

Chop all veges and saute on medium high in olive oil in a large stew/soup pot until soft. Debone chicken and chop into bite-sized pieces. Add rice, chicken, stock, & spices. Bring to a boil and then simmer unitl rice is done.
