Introduction

Ingredients

    16 oz. ground beef, extra lean
    1/2 chopped onion
    1/2 chopped green bell pepper
    14.5 oz. can corn, drained
    2/3 cup water
    taco seasoning packet (40% less sodium)
    1/2 cup 2% shredded cheddar cheese, divided in half
    6 corn tortillas
    14.5 oz. can black beans, drained
    14.5 oz. can mild Ro-Tel


Directions

1. Preheat oven to 375. Brown beef in skillet. Add taco seasoning and water and simmer until most of water is gone. Add chopped onion and green pepper to beef and simmer on low heat, stirring occasionally, for about 5 minutes. Set aside.

2. In a separate bowl, stir together black beans, Ro-Tel, corn, and 1/2 cheese. Tear tortillas into 1" pieces and add to mix. Last, add beef mixture to bean mixture.

3. Spray 13" X 9" baking dish with cooking spray. Spread bean and beef mixture in pan. Cover with foil and bake at 375 for 30 minutes.

4. Remove foil and top with remaining cheese. Cook, uncovered, for another 10 minutes, or until cheese is melted.
