Introduction

Number of Servings: 13

Ingredients

    2 C Whole Wheat Flour
    1/2 tsp Baking Soda
    1 Baking Powder
    3/4 tsp Salt
    2.5 Tbsp Granulated Sugar
    3 Eggs (medium or large)
    3 Tbsp Applesauce
    1 Tbsp Canola Oil
    2 C Milk, 1%
    1 Tbsp Lemon Juice
    1 1/4 C Fresh or Frozen Blueberries (do not thaw)
    3 Tbsp Flax Seed
    Vegetable Spray for Waffle Iron

Directions

In a small bowl combine milk and lemon juice (or just use lowfat buttermilk, no juice) set aside.
Preheat Waffle iron, grease w/ spray.
In a medium bowl whisk together flour, soda, baking powder, salt and sugar.
Add eggs, applesauce, and oil to Milk Mixture. Combine dry ingredients and liquid ingredients together, let rest 5 min.
Fold in blueberries and flax seed. Ladle onto hot waffle iron and bake to desired crispness (I prefer these ones a little more well done). Enjoy w/ 1/2 Tbsp maple syrup, if desired.
