Ingredients

    1 teaspoon extra-virgin olive oil
    1 teaspoon chipotle chili powder plus 1 pinch, divided
    1 teaspoon Kosher salt, divided
    18 oz boneless, skinless chicken, trimmed of fat
    1 jalapeno pepper, finely diced
    1 can of pineapple rings
    1 Large, Fresh Mango, sliced
    1 red bell pepper, finely diced
    1 green bell pepper, finely diced
    1/2 cup minced red onion
    1 tablespoon of garlic powder
    2 tablespoons red-wine vinegar

Directions

Preheat grill to high. Combine oil, 1 teaspoon chipotle powder, and 1/2 teaspoon salt in a small dish. Rub mixture into both sides of steak.

Meanwhile, grill the chicken for 6 to 8 minutes per side for medium, or until desired doneness. Grill pineapple rings and mango slices until moderately charred, 1 to 2 minutes per side. Remove the chicken, mango, and pineapple from the grill. Let the chicken rest for at least 5 minutes before slicing very thinly into strips.

Meanwhile, dice the pineapple and mango and transfer to a medium bowl. Add bell pepper, onion, cilantro, vinegar, the remaining pinch of chipotle powder, and the remaining 1/2 teaspoon salt; toss to combine.

Serve chicken with pineapple salsa over. Great served with whole grain brown rice!

    Little glitch in the instructions. See the end of the first paragraph of instructions "Rub mixture on both sides of steak." Might want to edit since it should be chicken. - 7/7/11
