Introduction

A delicious, healthy omlette that even my daughter will eat! A delicious, healthy omlette that even my daughter will eat!
Number of Servings: 1

Ingredients

    1 cup Egg substitute (I used Egg Beaters)
    Approx 7 leaves fresh Spinach
    1/4 cup fresh Tomatoes, chopped
    1 small sweet orange pepper, approx 100 gram
    Turkey breast meat, 2 slices
    1.5 Mini rounds of Baby Bell Light Cheese, crumbled

Directions

Cut up tomato and pepper into small, bite size pieces and cook in a small non-stick skillet until at desired tenderness.
Add egg beaters to pan and cook until partially solid, then add spinach and turkey.
Once mostly solid, sprinkle cheese on top and allow to melt.
Fold omlette in half and remove from pan
Makes 1 Omlette
