Introduction

Ingredients

    1 onion, sliced
    1 Tbs olive oil
    1 package Spinach (10 oz)
    1 can diced tomatoes (14 oz)
    1 can red kidney beans, or garbanzos, or white beans
    1 tsp turmeric (optional)
    1 Tbs chopped pickled jalapeno pepper or to taste

Directions

Heat olive oil in pan and saute onion until golden. Add spinach and saute until wilted. Add tomatoes, beans, turmeric and jalapeno. Continue to cook until heated through.

Serving Size: Makes 4 servings

    Very Good
    This was a nice change to my spinach recipes, I added 1/2 cup of salsa as I did not have any tomatoes, I also added 1/8 tsp of cummin and fresh diced jalapenos, which gave it a little kick. This was a very good recipe and will make again. - 11/21/13
