Introduction

Flavorful with fresh tomatoes, even better the next day! Flavorful with fresh tomatoes, even better the next day!
Number of Servings: 6

Ingredients

    2 slices Bacon
    4 Scallions
    2 large tomatoes (fresh)
    1 can RoTel
    12.5 oz Country Style Pork Ribs ( as lean as you can get)
    1 Tbsp Chili Powder ( or to taste)
    1/4th small Jalapeno pepper (sliced)
    1 Cup Brown Rice
    1-1/2 cups water (more or less depending on how juicy tomatoes are)
    Salt & Pepper to taste..

Directions

Cut Country Style Pork Ribs into 1" cubes

Heat non-stick pan on medium and cook Bacon until crispy

While Bacon is cooking, slice garlic, scallions, andJalapeno pepper and dice tomatoes ( I use all purpose disposable gloves to handle Jalapeno pepper, you can slice all of it and then freeze for another recipe)

Take Bacon out of pan, put on papertowels to drain

Put the cut up pork into bacon drippings, add garlic,chili powder, and salt & pepper to taste, when pork is almost done (pink) add the scallions and jalapeno pepper to pan, cook for a few more mins....

Stir in the rice to coat and cook for a few mins., then add diced tomatoes, RoTel and water

Cover and simmer for 25-30 mins. crumble bacon and add for the last 5-10 mins of cooking time or until rice is tender
