Ingredients

    4 cups grated or shredded carrots
    1 cup crushed, juice-packed pineapple
    1/2 cup shredded coconut
    1/4 cup Hellman's mayonnaise
    1/4 cup sour cream

Directions

Combine all ingredients until well-mixed. Chill for several hours or overnight.

Serving Size: Makes 8 servings, about 2/3 cup each.
