Introduction

A zesty and very hearty salad that can be served many different ways. Especially good on a bed of mixed Romaine and Spinach. A zesty and very hearty salad that can be served many different ways. Especially good on a bed of mixed Romaine and Spinach.
Number of Servings: 6

Ingredients

    1 can Low Sodium Whole Kernel Cortn, drained and rinsed
    1 can Black Beans, drained and rinsed
    1 cup Cherry Tomtoes, halved
    1 sm Red Or Green Bell Pepper, chopped
    ½ Red Or Vidalia Onion, chopped
    1 ½ cups Cooked Chicken (Left-Over), cubed
    2 tsp Tabasco Sauce
    2 Tbsp Lime Juice
    2 Tbsp Olive Oil
    1 tsp Fresh Parsley, finely chopped
    Salt & Pepper, to taste

Directions

Combine the first 6 ingredients in a large bowl; mix gently. In a small bowl, combine Tabasco sauce, lime juice, olive oil and parsley; add salt and pepper. Drizzle liquid mixture over salad ingredients and toss gently. Chill salad before serving.

Serving Size: makes 6 1-cup servings
