Number of Servings: 1

Ingredients

    5 tbsp Bob's Red Mill flax meal
    1/4 tsp baking powder
    2 tbsp DaVinci Sugar Free flavored syrup
    1 tsp butter
    1 large egg

Directions

Use a coffer mug for a muffin shape, or use a cereal bowl or similarly shaped dish for a flatter muffin that can be sliced in half to make "bread".

Melt the butter in the dish (15-30 seconds in microwave).
Add syrup and egg and mix/scramble.
Add the dry ingredients and mix everything well.

Microwave for about 1:30 on high.

Dump out of mug or dish. Can slice in half and add a scrambled egg in the middle for a breakfast sandwich!

    Tried with my Atkins low carb husband. Very nice. I do think it should be renamed 1 1/2 minute muffin, though. We used golden flax, what do others normally use on this? Vanilla sf syrup was great! - 10/8/15
