Introduction
My own twist to "Hungry Girls" low calorie alfredo. Using super low calorie tofu noodles, lots of veggies, laughing cow cheese and sour cream this tastes just like alfredo with out the calories. This makes about 4 servings great for a family meal or for batch cooking. The great thing about this recipe is its modification possiblities are endless! Ingredients

2 package shiratake fettuccini tofu noodles
4 laughing cow garlic & herb cheese wedges
2 Tbsp fat free sour creem
1-8oz pkg sliced mushroom-cooked
1/4 cup sun dried tomatoes (drained)
1 package cooked chopped spinach (frozen)
1/2 cup normandy frozen vegetable blend
1 Tbsp parmesean romano grated cheese
1/3 cup fire roaste peppers - chopped
1 cup diced cooked chicken (8oz)
3/4 tsp gourmet garden basil blend (paste)
1 tsp minced garlic
Directions
Rise noodles very well & then ppat dry eliminating ALL moisture. Combine all ingredients in a bowl (except LC wedges & sour cream). In separate bowl melt together in microwave the laughing cow wedges and sour cream. Add to mixture and mix well. Cut noodles if necessary to make them incorporate well. Makes 4 servings.
