Introduction

Moroccan style lamb cooked in a tajine, to be served over couscous or rice. Savory and slightly spicey

This recipe is one that I created after trying many different authentic middle eastern lamb dishes. It basically is my changes to the spices and ingredients until it was to my taste. If you are looking for a completely authentic recipe, this isn't it! I just thought I would share!

Also: This recipe is the one I use when cooking for just my partner and I, we usually end up with enough leftovers to eat the meal twice, most people would probably prefer more meat, so you may want to use 2 lbs instead of just 1.

Directions

Please read ingredients list! The Nutritional Entry here was missing some things and I didn't have the time to spend entering them manually! ~ Thanks!~

Also: This recipe is very high in sodium, so certainly shouldn't be just an every day meal!

Cube lamb and brown with 1 tbsp oil in tajine or other large skillet, once finished remove from pan and place in bowl. Add rest of olive oil and onions and garlic, cook on medium until onion is soft. Add chicken broth, then all other spices, tomato paste and honey, bring to a boil before reducing heat.

Add lamb and carrots to the dish then cover and left simmer for an hour. Add chick-peas (don't add earlier or they turn to mush!) and then simmer for another hour.

Serve over cous-cous or rice, serve broth on the side to be added to taste.

Serving Size: makes 6 1 cup servings
