Ingredients

    1 onion, chopped
    1 clove garlic, chopped
    2 tblsp olive oil
    1 pint skimmed milk
    2 carrots, peeled and chopped small
    1 large potato, peeled and chopped into small chunks
    100g frozen or fresh broad beans
    handful fresh or frozen green beans
    4 tblsp fresh or frozen peas
    6-8 florets brocolli, chopped
    2 tblsp fresh parsley
    4 tblsp fresh mint
    seasoning



Directions

gently fry garlic and onion in oil, add carrots, and all other fresh veg and potato. stir and sweat with lid on for a few minutes. boil kettle, and add just enough water to cover the veg, replace lid and cook until veg soft. add milk, herbs, any frozen veg if using, and bring back to boil. simmer until all soft, and mash very gently. adjust seasoning and serve.
