Introduction

Ingredients

    Soybeans - soaked overnight
    1 C rolled oats
    1/2 C oat bran
    2 oz shredded, unsweetened coconut
    1/2 C sliced almonds
    1 C dried cranberries
    1 C packed brown sugar
    1/2C (4oz) Fat-free Greek yogurt
    1 1/4 t cinnamon
    1/4 t nutmeg
    9 C water

Directions

Soak soybeans in water overnight. Discard soaking water. Grind soybeans in a food processor in batches with 4 cups of water, or with a stick blender.

Bring an additional 5 cups of water to a boil on the stove. Add the ground soybeans with their water. Bring just shy of a boil, boil for 8 minutes. Strain liquid through cheesecloth, retain the okara for use in the granola. The liquid in the pot is now soymilk and can be flavored as desired.

Combine all other ingredients in a LARGE bowl. Mix until thoroughly combined. Spread on a baking sheet in an even layer and bake at 325 for 30 minutes. Remove pan from oven, stir, and return to oven for an additional 30 minutes. Stir again and bake for an additional 15 minutes, being careful not to burn your granola!
