Ingredients

3/4 cup sifted coconut flour
1/4 cup golden flax seed meal
/13 cup plu 2 Tbsp ground sunflower seeds
1/8 tsp alum-free baking powder
1/2 tsp fine sea salt
/12 tsp xanthan gum
1/16 tsp pur stevia powder
1 /8 Active Dry Yeast (half a packet)
4 large eggs, room temp
3 Tbsp melted unsalted butter
2 Tbsp melted coconut oil
1 1/2 tsp honey
1/2 cup warm water
Directions
Use muffin top pan (6) or baking sheet w/ silpat or parchment.
Preheat oven 350
In large mixing bowl combine coconut flour, flax seed meal, sunflower seed meal, salt, xanthan gum, stevia and baking powder. Add yeast and honey to warm water (105-110 degrees) In separate bowl whisk eggs, oils. Add yeast mixture and whisk into eggs/oil mix. Using mixer - add wet ingredients to dry and blend for a least one minute until dough is light and airy. It will be sticky.
Drop 6 large dollops of dough onto prepared pan. Using wet fingers smooth the tops (leaving them rounded on top).
Bake for 25-30 min until golden brown and firm to touch. Let cool and enjoy with butter and as bread for favorite sandwich.
